What is it? Dunnes Stores Simply Better Irish Corn Fed Part-Boned Chicken Breasts (€8.99; 920g).

What’s good about it? Simply the best supermarket chicken breasts I have found. I buy these every week. Don’t be put off by “part-boned”, the bone is minimal but makes a big difference to how the chicken cooks, keeping it juicier. I also like that the skin is attached, which suits some cooking methods, though it can be easily pulled off if you prefer.

Who makes it? It is part of the Dunnes Stores Simply Better range, though the credit should go to the Irish poultry farmers who supply the chicken and who are name checked on the packaging.

How do I use it? I like to marinate it in a mixture of zero fat Greek style yoghurt, lemon rind, crushed garlic, a pinch of chilli flakes (optional) and white pepper (salt it just before cooking). Sometimes I leave it overnight, for convenience, but a couple of hours is enough as the yoghurt is a powerful tenderiser. Spritz with olive oil and cook on parchment paper in an airfryer or oven, with the marinade adhering to the chicken. For a change, skip the lemon and garlic and add a spoon of harissa paste to the yoghurt.

Anything else? The portions are big, but leftovers can be used in salads, risotto or pasta dishes and are very handy to have in the fridge; leave them on the bone until you want to use them.
