Sir, – I want to thank The Irish Times food writers for their fantastic array of recipes over the past several months. It seemed like an extra effort was being made to come up with tempting recipes during the various lockdowns. I now have a bulging folder and find that I am trying something new almost every week. Some recent highlights have been the cauliflower korma, beetroot stew with blue cheese and walnuts (both Paul Flynn) and duck with blackberry sauce (Lilly Higgins).
