Ingredients

  • 4 white onions
  • 300g sausage meat
  • 2tbs olive oil
  • 2 garlic cloves, minced
  • 220g breadcrumbs
  • 120g grated parmesan
  • 1tbs fresh parsley, chopped
  • 1tbs fresh thyme, chopped
  • Salt and pepper
  • 1tbs chopped chives
  1. Preheat the oven to 200 degrees.
  2. Cut off the tops of the onions and peel off the outer layers. Cut a thin slice off the bottom of each onion so that they sit flat. Scoop out the centres of the onions, leaving a thick outer layer intact.
  3. In a pan, cook the sausage meat over medium heat until browned and cooked through. Remove the sausage from the pan and set aside.
  4. In the same pan, add the olive oil and garlic. Sauté for two minutes until fragrant. Remove from heat.
  5. In a bowl, combine the cooked sausage, breadcrumbs, grated Parmesan cheese, parsley, thyme, sautéed garlic, salt, and pepper. Mix well.
  6. Stuff each onion with the sausage and breadcrumb mixture, packing it tightly. Place the stuffed onions in a baking dish. Drizzle a little olive oil over the top of each onion. Cover the baking dish with aluminium foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until the onions are tender and the stuffing is golden brown.
  8. Remove the dish from the oven and sprinkle additional grated Parmesan cheese over the top of each onion. Return to the oven for five minutes until the cheese is melted and bubbly. Garnish with chives.
