Turkey, ham and stuffing pie with Hegarty’s cheddar mash

Ingredients
  • 150g butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 150g plain flour
  • 100ml chicken stock
  • 250ml cream
  • 500g cooked turkey, chopped
  • 350g cooked ham, chopped
  • 200g stuffing
  • 1 bunch parsley, chopped
  • 1/2 lemon, juiced
  • Salt and pepper
  • 1kg potatoes, peeled and chopped
  • 50g butter
  • 4 tbsp cream
  • 1 free range egg yolk
  • Salt and pepper
  • 150g grated Hegarty's cheddar

1. Melt the butter in a pan and add the onions and garlic. Cook for eight minutes on a medium heat, until soft.

2. Add the flour and cook out for four minutes. Add the stock and cream and simmer for five minutes, until thick. Add the turkey, ham and stuffing, along with chopped parsley, and mix altogether. Add the lemon juice, salt and pepper and place the mix into a deep ovenproof dish and set aside.

3. For the mashed potato, place the potatoes in a saucepan of boiling water and cook for 40 minutes (or until soft). Strain the potatoes and return them to the pan. Mash the potatoes and then add the butter, egg yolk and cream and mix together. Season with salt and freshly ground black pepper. Place on top of the pie mix and grate the cheddar on top. Bake for 35 minutes at 185 degrees.
