Chef Dylan McGrath has opted out of the Michelin-star-chasing style that previously defined his cooking and has created a back-to-basics concept for his new restaurant, Rustic Stone, which opens in Dublin on Tuesday.
Instead of fawning waiters smothering customers with service, you’ll be expected to cook your own meat or fish dish on hot volcanic stone at the 17 South Great George’s Street restaurant. Prices are set to be “affordable and accessible”, and the emphasis is to be on “seasonal ingredients” and “simple techniques to extract the best flavour”, according to McGrath.
