Pancit (Filipino noodle stir fry)

Ingredients
  • 1tbs oil
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 350g cooked, shredded chicken or turkey
  • ½ head of Chinese cabbage, finely shredded
  • 8-10 Brussels sprouts, finely shredded 
  • 4 carrots, peeled and thinly sliced
  • 4tbs soy sauce
  • 250ml stock or water
  • Black pepper
  • 250g thin rice noodles or noodles of choice
  • TO GARNISH:
  • 2tbs toasted sesame seeds
  • lemon wedges

1 Soak the noodles according to packet instructions.

2 Heat oil in a wok or large pan over medium heat. Sauté the onion until almost soft, then add the garlic, chicken, cabbage, carrots and sprouts. Add the soy sauce and water or stock. Season with black pepper. Stir and cook until the cabbage just begins to soften.

3 Drain the noodles well and add to the wok, and cook until heated through.

4 Transfer to a large serving bowl and scatter with the sesame seeds and serve with lemon wedges.
