My guilty pleasure after service is the leftovers. Sometimes it’s cocotte potatoes. Or lemon tart.

We had a confit duck leg dish on at Burnt Truffle. The garnish was faggots of the usual heart and liver. The dish completely bombed and each night I would nail every single unsold faggot, anything from four to twelve. As if this wasn’t heart attack material enough I used to pour all the leftover Bearnaise sauce over them first. I’m a sucker for an okra curry on a Saturday night washed down with a couple of Cobras.
