Food is our fuel. From my time as a sportsperson, I know how important the right fuel is for both our bodies and our minds. After a long day filming Ireland’s Fittest Family, I definitely need to replenish my energy levels after chasing my families around and racing against the other coaches.
This is a quick and easy meal I can still manage to whip up after a busy day as it’s ready in about 30 minutes, 10 minutes prep and 20 minutes cooking time. It’s one to come back to again and again and change up. You can make it with or without chicken and you can use seasonal vegetables too.
You could use any pesto, my preference is for red pesto, but green basil pesto will taste great also. You could use regular cream cheese, I choose light cream cheese so you still get the delicious taste, with fewer calories and much less saturated fat. You could bulk out the dish with more vegetables and nutrients by adding some baby spinach at the end also. Have fun with your cooking and remember, healthy food doesn’t have to be bland.
