Sir, – Have your readers experienced the bacon in many hotels served for breakfast that is grilled on one side and poached on the other? I believe this lazy bacon is destroying the Irish breakfast. Cooking bacon without turning it means putting rashers on the table that look good on one side but have white residue on the other from the salt water that has come out of the bacon.
