THE Five Chefs of Fingal sound like a swashbuckling lot altogether, a gang of galloping gourmets on a crusade to restore the culinary glory of north Co Dublin, perhaps. Shrove Tuesday gave the Fingal Five the perfect opportunity to launch their latest adventure, the Fingal Spring Food Festival, at the King Sitric restaurant in Howth. The true identities of the Five Chefs of Fingal are Aidan MacManus of the King Sitric, Terry McCoy of the Redbank in Skerries, Paul Lewis of the Old Schoolhouse in Swords, Eric Faussurier of the Osborne in Portmarnock, and Patsy McGuirk of the Bon Appetit in Malahide. Each provided a pancake dish for a fivecourse lunch at the King Sitric, at which details of the festival were announced.

Getting through five different variations on pancake sounded a little daunting, but luckily the menu featured such light fare as Consomme Celestine (a beef soup with just a few pancake bits tossed in) and Honey-glazed Pancake with Marinated Salmon. A fine flipping way to start Lent.
