Try this Japanese treat over Christmas: asparagus and tofu stir-fry suggested by Sayaka Mitsuhashi of the Okinawa Centenarian project, courtesy of Brad Willcox, co-author of the Okinawa Way.
Coat a large pan with a thin layer of oil and heat. Crack three eggs in a bowl. Scramble eggs and fry for 45 seconds or until cooked. Set aside on a plate. Wipe pan and heat 1tsp. oil over medium heat. Cook two cloves garlic, minced, and 1 tbs pf ginger, minced, until golden. Increase the heat to medium-high. Add 15oz cubed tofu and stir continuously for 4 minutes or until golden. Add asparagus, cut into 1 inch lengths and cook for 6 minutes. Add salt, black pepper and egg. Gives four people a break.
