Chocolate and Walnut Muffins

7oz/210g/1 cup white plain (all-purpose)flour

3 oz/90g/6 tablespoons sugar

6 tablespoons cocoa powder

2 teaspoons baking powder

1/2 teaspoon baking soda

2 teaspoons cinnamon

1/4 teaspoon salt

2 eggs, beaten

4 tablespoons milk

4oz/120g/1 stick butter, melted

2oz/60g/1/4 cup walnuts,

coarsely crushed.

Preheat the oven to gas mark 7/400 F/ 220 C. Grease a muffin tin or have paper cases ready. Sift the flour, sugar, cocoa, baking powder, bread soda, cinnamon and salt into a basin.

Mix together the eggs, milk and melted butter and add to the dry mix. Stir lightly to mix and then fold in the nuts.

At this stage, if you wish, you can add in a chopped-up bar of your favourite chocolate. Fill the muffin cases three-quarters full and bake in the oven for approximately 15 minutes or until the blade of a knife comes out clear when inserted.
