The winner of our pre-Christmas competition is John McCarthy of Ballyboden, Dublin 16, who wins an overnight stay for two, with a four-course dinner and a cookery class at chef Catherine Fulvio’s Ballyknocken Cookery School, Co Wicklow.
His recipe, which had to be 140 characters or less, is: “Mix 125g marmalade with juice 2 oranges 2 lemons chopped basil Pour over 8 skinless chicken breasts Bake at 200Cgas 6 for 20 mins”.
