Cork goes on the sauce – with chilli and whiskey

Rebel Chilli releases 900 bottles of hot sauce which has been matured for 62 days in an Irish whiskey cask


Some like it hot, and some like it hot and boozy. Rebel Chilli, a Cork city condiments company, today released for sale a limited edition hot sauce that has been matured for 62 days in a whiskey barrel.

Managing director Paul Moore can't reveal what brand of spirit was in the barrel before it was replaced with 200 litres of hot sauce, but says it previously held bourbon, then an Irish whiskey.

“We weren’t sure how it would work out, so it was a bit of a risk as it’s a lot of sauce. Bur we’re delighted with how it has turned out,” Moore says. “You get spiciness on the lips and then the warmth from the whiskey in your throat.”

The limited edition of 900 numbered bottles of Barrel Aged Hot Sauce (€7) went on sale online today at rebelchilli.com. Shipping costs an additional €6.50, unless your order comes to €30, in which case it is free.

Moore got into the condiments business straight after leaving college in 2014, starting out making chilli sauces and relishes in his mother’s kitchen and selling them at markets.

He and sales director Fergus Murphy now manufacture a range of six sauces and relishes in an industrial estate in Wilton in Cork, supplying Dunnes Stores, SuperValu and Tesco, and exporting to the UK and Spain. They also supply the Chopped salad chain with sweet chilli sauce.
