Irah Pebredo's one-pan egg tofu with minced pork

Course: Starter or lunch

Ingredients

  • For the sauce:
  • 2 tbsp soy sauce
  • 1½ tbsp oyster sauce
  • 1 tsp sugar
  • Salt and pepper to taste
  • 1 pack egg tofu or regular tofu, cut into 1-inch pieces
  • Vegetable oil (any neutral-tasting oil will do)
  • 3 garlic cloves, peeled and minced
  • 1 medium onion, peeled and diced
  • 250g pork mince
  • 100g green beans, chopped into thirds
  • To serve: Cooked rice and a sprinkle of sesame seeds on top
  1. In a small bowl, mix and combine the soy and oyster sauces, sugar and seasoning. Set aside.
  2. Heat a wok or a frying pan to medium-high heat and add oil.
  3. Fry the tofu for three minutes on each side or until slightly golden brown. Remove from pan once golden and set aside.
  4. In the same pan, sauté garlic and onion for one-two minutes or until the onion is translucent.
  5. Add the pork mince and stir-fry for five-eight minutes, until fully cooked.
  6. Add green beans and sauce and stir to combine.
  7. Add the fried tofu back into the pan and cover to simmer for five minutes.
  8. Sprinkle with sesame seeds, serve with a warm bowl of rice and enjoy.
