THERE is a splendid selection of game dishes and wines to compliment them planned for the Irish game evening at Adare's Wild Geese restaurant, on November 10th.

Ralph Parkes of Limerick's Fine Wines has organised the bottles to match Serge Coustrain and Conleth Roche's menu, so things kick off with a wild mushroom and pheasant terrine paired with a Kiwi Sauvignon Blanc, move on to a mallard duck consomme en croute with an Aussie chardonnay before the big guns arrive, in the shape of a 1988 Chateau Larivet Haut Brion to match the Irish game plate.

The seductive Banyuls Domaine de la Rectorie will bring things to a rousing climax in the company of a warmed chocolate and almond pear tart.
