Sir, - I am sick and tired of assurances from vested interests in farming and food that there are no human health implications in the present horse meat scandals. For all I know horse meat, properly - including legally - sourced, tested, slaughtered and distributed, may be the finest food imaginable. However, since we know nothing about the provenance of the equine material now entering the food-chain, how can such assurances be given? - Yours, etc,
Sir, - Those who are investigating the beef burger scandal should concern themselves, not with traces of horse or pig, but with "cowboy" DNA. There's a lot of it about in this country, and it has freely infected numerous areas, such as politics, banking, church, property speculation, etc. There appears to be plenty left over to contaminate the food chain. - Yours, etc,
