You will need an Astrud Gilberto soundtrack playing as you eat this, and with a glass or two of booze you will probably need to lie down afterwards. Serious blowout food, and seriously delicious.
Elephant & Castle owner Liz Mee points out that in place of the hollandaise, for those concerned about their waistline, you could use a salsa - perhaps tomato, red onion and coriander. Fillet steak is not mandatory, but I think it is the best choice.
1 avocado, sliced thinly and fanned on two plates
2 small bananas cooked in butter until golden brown
8 ounces fillet steak, grilled as you like, then sliced and arranged in over-lapping slices
4 eggs, fried sunny-side up
Place the sliced fillet on the plate alongside the avocado, add the fried banana and the fried eggs. Garnish with one tablespoon of hollandaise on each plate over the avocado, then sprinkle with chives. Finally, add a twist of orange to each plate.
