FOR my money, the American Paula Wolfert is perhaps the finest cookery book writer today, with each of her books a statement of authority on the cuisines she examines.
Sadly, many of her books have only had an intermittent release over here, but one of her early classics, Mediterranean Cooking has been issued in a smart new edition by HarperCollins. Her book has not aged a jot, and the many new recipes are a valuable addition to a book which is perfectly ageless.
She concentrates on four principal themes: the best recipes for classic dishes; unusual regional dishes; dishes which use similar ingredients differently and, finally, lesser-known dishes she considers worthy and delicious.
