FORMER Brown Thomas catering specialists Derek Breen, Kate O’Sullivan and Veronica Muresan have opened The Vanilla Pod Eatery restaurant at The Park, Carrickmines, Co Dublin. The company is trading out of a unit of 148sq m (1,593sq ft) where is serves breakfast, lunch, afternoon cakes and weekend brunch.
