I’ve recently moved from rugby into the financial-planning world, with AskPaul, so budgeting is on my mind. I’m always keeping my eyes out for ways to save and be more efficient with money. Home cooking, of course, can be a part of watching your budget. But for me, it still has to taste great and keep the rest of the family happy too.

This recipe does all of those things – it’s one everyone in my house loves. We discovered it in Ciara Attwell’s book My Fussy Eater, and it has been a favourite ever since. It’s a one-pot wonder, so the clean-up is kept to a minimum.

I use shallots when I can, as they are a bit sweeter, but onions will work just as well. In fact, there are plenty of tweaks you could make to this recipe to suit what you have at home. You could swap salmon for chicken, and the vegetables can switch too. I love to finish this with coriander, but parsley works also.
